A remarkable, cave aged, unpasteurised hard cheese made from a mixture of cow, sheep and goat milk. The cheese is truly artisan, being pressed by hand then naturally smoked before being aged in caves. The resulting cheese is slightly blue with a nutty, smoky rich flavour. It tastes unlike any other cheese, remarkably full and lingering.

The cheese is truly artisan, being pressed by hand then naturally smoked before being aged in caves. The resulting cheese is slightly blue with a nutty, smoky rich flavour. It tastes unlike any other cheese, remarkably full and lingering.

Gamonedo (sometimes also written as Gamoneu which is the local Asturian dialect) is aged in pretty much the same environment as the much more famous and much, much more blue Cabrales cheese. Cabrales is not pressed before going into the caves which means that the moulds penetrate right into the cheese, making Roquefort look like a whimp in comparison. Gamonedo on the other hand, being compressed by hand, only allows the penecillins to encroach into the edges of the cheese. This gives each cheese a unique look, feel and taste.
