Valle Estrechu is a pure woodland honey from a set of just seven hives spread through the forests of the Picos de Europa mountains – an area so remote, honey is still lost to bears. This idyllic setting produces an incredibly rich, warm, slightly chestnutty flavour that manages not to be overly sweet. Not organic (in that woodland can’t be organic), this honey nevertheless is very, very carefully handled to ensure it loses none of its natural properties.

Valle Estrechu is a pure woodland honey from a set of just seven hives spread through the forests of the Picos de Europa mountains – an area so remote, honey is still lost to bears. Just seven hives are spread through the dense chestnut forests of the Liebana Valley to the south east of the Picos mountains. 

This idyllic setting produces an incredibly rich, warm, slightly chestnutty flavour that manages not to be overly sweet. Not organic (in that woodland can’t be organic), this honey nevertheless is very, very carefully handled to ensure it loses none of its natural properties. They don't even paint the hives! Maria was well on her way to getting bio-dynamic certification for the honey which means that not only is it completely natural and raw, it is also harvested in tune with the seasons and lunar cycles. 

Whatever that may or may not mean to you, the honey itself has a fan base here in Brighton which makes it quite hard to keep hold of once Maria sends it to us. The honey is available outside Maria's gate, in the town of Potes in northern Spain, and here.
