From the Navarra region of northern Spain, these lentils are 'extra’ quality. Cooked, the lentils are stored in brine, though in truth, we never strain them as the brine really comes out more like a stock. Also, the lentils are really packed in here so there is hardly any room for liquid in any case.

These lentils hold their shape and form even when heated through for hours. Stir into some fried spicy  chorizo for a quick, hearty and tasty supper.
