Salchichon
A delicious, continental style sausage from the north of León. This is an unusual product for Spain because of its pronounced herby and garlic flavour. It tastes like a fairly subtle salami but because it has been cured for longer it is harder. The meat’s drier texture is blended nicely with smooth, flavourful fats. It looks like a French saucisson but for some reason tastes even better. Seriously good.

Top tip: slice thinly and enjoy it on its own or in a buttered baguette. If you have a cool, dark place to store this then you can hang it and it will keep for months. If not, keep it in the fridge.
