A wonderfully rich and spicy chorizo from Leon to the north of Madrid.

This chorizo is well cured so the meat has a good, slight dryness to it which plays well with the oils. The first flavours to hit are oak smoke and warm paprika. The spicy heat comes afterwards and quickly builds to a nice peak, then it’s gone leaving the oak smokiness to linger.

A wonderfully rich and spicy chorizo from our artisan friend Jesús in the province of León to the north of Madrid.

This chorizo is well cured so the meat has a good, slight dryness to it which plays well with the oils. The first flavours to hit are oak smoke and warm paprika. The spicy heat comes afterwards and quickly builds to a nice peak, then it’s gone leaving the oak smokiness to linger.

You can eat this chorizo as is, no need to cook or prepare it in any way. Having said this, there are no preservatives or additives in this chorizo so it is great for cooking as well. Being cured, you would tend to dice it up to fry the chorizo at the base of a dish to give it some depth of flavour and heat. If you tried to cook it in larger lumps in a stew then you are likely to find that it's too dry. For this, you really want our cooking chorizo.
